Spinach Salad

  • 12 c torn spinach
  • 3 hard boiled free range eggs
  • 8 slices bacon
  • 1 c sliced mushrooms
  • 1 c shredded swiss cheese
  • 2 cloves chopped garlic
  • 1/2 tsp dry mustard
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 tbsp sugar
  • 1 fresh free range egg
  • 1 tbsp lemon juice
  • 1 tbsp tarragon vinegar
  • 2/3 c salad oil


1.  Cook bacon until crisp and place on paper towel to cool. Place spinach in a large salad bowl. Chop eggs and place into a small bowl along with the cheese and the mushrooms and set aside.

2.  Place garlic, mustard, salt, black pepper, sugar, egg, vinegar, and lemon juice into a blender and blend together .  Add oil slowly in a steady stream while still blending.  Dressing should have thickened but still be pourable.

3.  Pour dressing over spinach and mix well.  Add the eggs, mushrooms and swiss cheese and mix in.  Crumble bacon over top of the salad and serve.
