Ingredients:
- 1/2 cup butter
- 1/2 cup packed light brown sugar
- 1/2 cup granulated sugar
- 1 medium egg
- 1 tsp. vanilla
- 1/2 cup gluten free flour mix
- 1/2 cup fine quinoa flour
- 1/2 tsp. baking soda
- 1/2 tsp. sea salt
- 1/2 cup gluten free oats
- 1/2 cup chocolate chips
- 1/2 cup raisins
- 1/2 cup chopped pecans
- 1/4 cup large flake coconut
Method:
1. Preheat oven to 350 degrees F.
2. Beat butter and sugars together with a mixer at medium speed. Add egg and vanilla and beat just until blended into the butter mixture. Add the flours, baking soda, salt and mix together until combined. Add the remaining ingredients and mix together just until blended.
3. Drop tablespoons of batter 2 inches apart onto cookie sheets and bake for 10 minutes.
