Potato Pancakes



  • 4 large red potatoes
  • 2 tbsp wheat free breadcrumbs
  • 2 finely chopped green onions
  • 2 medium eggs
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 1 tbsp oil
  • 1 tsp butter


1.  Peel and grate potatoes into a colander. Rinse well and pat dry.  Place into a mixing bowl with breadcrumbs, onions, salt and pepper.  Beat eggs, then add to potato mixture and combine.

2.  Heat 1 tbsp of oil and 1 tsp butter in a large non-stick skillet until butter begins to foam.  Drop serving spoonfuls of potato mixture into the skillet.  Turn heat to medium and cover skillet and cook the potato pancakes for 5 minutes.  Flip over and cook uncovered for another 5 minutes.
