Ingredients:
- 1 cup almond flour
- ½ cup gluten free flour blend
- ¼ cup granulated sugar
- ½ cup salted butter, divided and softened
- 2 eggs
- ½ cup light brown sugar
- 1/3 cup corn syrup
- 1 tsp vanilla
- 1 1/2 tsp. corn starch
- 1 ½ cup golden raisins
- dash of salt
Method:
- Mix together the flours, the granulated sugar and ¼ cup butter together until crumbly. Press firmly into a 9”x9” pan with a spoon making a crust. Bake in a preheated 350 degree oven for 10 minutes. Remove pan and set the crust aside but keep the oven on.
- In a mixing bowl, beat the eggs together until foamy, and then add the remaining butter, sugar, corn syrup, vanilla and corn starch and beat until well combined for about 1 minute. Stir in the raisins and pinch of salt and spread over the crust in pan. Place pan back in oven and bake for 20 to 25 minutes. Cool and then cut into squares for serving.
